Yes, just find the previously sent email in your Sent folder and 'Forward' it to a SaneReminders address and we'll remind you if you do not get a reply by the time you specify.
If you forgot to add a CC or BCC SaneReminder address to an email before you sent it out, you can still set up a reminder after the fact.
